Preparation
With a whisk mix the oil with sugar and icing sugar
until you have a thick foam.
Stirring constantly add the eggs, one by one, and finally
the flour and yeast.
Continue mixing until the mixture is smooth, consistent and
creamy. After having peeled, washed and dried the blueberries
well, add them to the mixture.
Fill the muffin moulds halfway. Place them on the baking tray
and bake in a preheated oven (356/392° F) for 20/25 minutes.
A little extra
In this recipe, the taste of the Extra Virgin should
not overpower the other flavors. Therefore, an excellent choice
would be the balanced bouquet of Monini's Originale. |
