With a sharp knife, peel oranges, removing zest and
pith. Slice and arrange the orange slices on a plate side
by side slightly overlapping each other.
Thinly slice the onion to form rings. Wash and dry the rings
and distribute them over the orange slices.
Sprinkle with chopped parsley. Salt and pepper uniformly and
flavor with a good Extra Virgin olive oil. Let rest for at
least 10 minutes before serving.
